Green Chili with Homemade Tortilla Strips

Ingredients:

  • 1/4 cup canola oil
  • 2 large cloves garlic (smashed)
  • 1 medium onion (chopped)
  • 1 jalapeño (chopped)
  • 1lb. pork roast (diced)
  • 1/4 cup flour
  • 2 cups chicken broth
  • 4 cups water
  • 5-6 green chilis (chopped)
  • 1 – 14.5oz. can fire roasted tomatos.
  • 1 Tbsp. chili powder
  • salt/pepper to taste
  • 8 corn tortillas.
  • 1/4 cup olive oil
  • 1 Tbsp. chili powder
  • 1 tsp. garlic salt


Green Chili:

In a small stock pot heat garlic in oil on medium high. Add onions and jalapeño, sauté until tender. Add pork, sear then add flour and stir until thick. Add chicken broth, water, green chilies, tomatoes and chili powder. Bring to boil then lower heat and cook for 2 hours. Salt and pepper to taste.

Tortilla Strips

Preheat oven to 400°. Mix oil, chili powder and garlic salt in small bowl. Brush corn tortillas on each side with oil mixture. Stack tortillas and cut into 1/2 inch strips. Arrange on cookie sheet lined with foil. Bake for 10 minutes or until chips are crunchy. Salt with sea salt when warm. Enjoy!
