Tapas

Green Chili

    • 2 lbs. Pork (shoulder or roast)
    • 1/2 c. vegetable oil (cover bottom of pot)
    • 1/2 c. flour
    • 2/3 c. onion
    • 4 cloves garlic
    • 1/2 or 1 c. green chilies
    • 2 cans diced tomatoes
    • 6 c. chicken broth
    • 1/2 teaspoon cumin
    • 1 tsp. chili powder
    • 1 diced jalapeno pepper
  • Salt and pepper to taste

 

Heat oil in stockpot. Saute onion and garlic in oil then add pork. Sear pork until partially cooked.

Add flour and stir. Add chicken broth slowly and keep stirring.

Add spices and rest of the ingredients.

Stir often and cook over medium heat for about 1 1/2 hours. Turn to medium low heat and cook for another 2 hours. If it needs to be thicker just add flour and water mixture.

All spices amounts can be adjusted depending on your taste.
